NUS Are Good News: forgotten fish
Turin, 24 February 2026 — the READY TO EAT value of neglected fish species with the Cuomo Method®. PRIN, Turin / Padua / Bari.
The conference “NUS Are Good News – Innovative Food from Neglected and Underutilized Fish Species” took place in Turin on 24 February 2026. The PRIN project, launched in 2022 with the universities of Turin, Padua and Bari, showed that commercially “minor” fish species can be turned into safe, stable, gastronomically interesting READY TO EAT products with Stagionello technology and the Cuomo Method®.
